Latest Pro Tools (2022) pitch variations and copy/paste

Using latest protools 2022, and I noticed two things that i don't get on pro tools 11.

1) you know you sometimes get variations in pitch occurring when recording a midi instrument, so if you look at the 'midi pitch' it's all over the place? On PT11 I could delete the midi pitch and then it'd play normally. However on PT 12 i cant seem to do that.

2) I'm sure there is some different functionality for copy and paste from one track to another. Suppose you have a midi part on eg a piano and you want to paste it onto a bass track, when I right click it doesn't seem to give me the option to paste it.
