recording with outta Click track

I got a band that wants to record with out click. any advice ?
and examples of albums with out clicks.
can it really sound good if they are out of time.

I'm bit worried as I'm the type that likes to record in time with click and spend hours making sure everything perfecting in time and quantized.

But this band wants a live sound.
