Fader flip/ Trim auto mode?

It can return to 0 after every trim pass (that's the default.) I, personally, don't like that because you don't get a chance to decide if that's what you want.
I like it to coalesce when I'm done with the trim (exit trim mode setting.)
The third option is manually. In which case, you can set a softkey to commit the trim to the main automation (thereby zeroing it out.)

But Eucon/S1 just follows the PT setting for all of this (it doesn't have separate automation setup options independent of Pro Tools.)

I always liked the "coalescing after each pass" pref, this way its "baked" into my session automation.

what I wasnt aware of, is that the S1 physical fader was linked to that pref.
