If someone could help, would be much appreciated. Is it possible to Mirror MON L-R to Adat Outs?

Not via a Carbon hardware setting, but you can send your main mix to multiple destinations using the Pro Tools menu:
Setup -> I/O -> Bus Tab
And Ctrl-clicking on multiple outputs for Mon L-R
