multi-mono versus mulit-channel plugin
I understand the difference in operation between multi-mono and mulit-channel plugins, but, from a practical point of view, when would you use multi-mono over multi-channel... when would you NOT want a stereo track to be linked?

Sometimes with compressors for example. If you have a stereo drum part and there are loud hits on one side and not the other you might want to compress just that side. Dual mono will process each side independantly, where as stereo would squish both sides at once
