For this release they say it runs on Sonoma 14.3. When I go to upgrade my Mac OS I can only choose to update it to Sonoma 14.4.

What did you folks do?

Yeah the irony of it all! The day Protools releases a version compatible with Sonoma 14.3.1 is the SAME day Apple STOPS signing 14.3.1 and pushes 14.4 with no way to upgrade to 14.3.1. (I'm guessing due to some sort of security exploit)

Ive seen some individual full blown installers for 14.3.1 from dubious sites but no combo update installers. Hopefully someone has an answer.

Ive also seen an alert about Pace security incompatibility with Sonoma 14.4.

Patience is a virtue, maybe wait another 6 months for 14.4 to become Protools 'approved'

Turns out there was some app running (related to plugin scanning) in my dock which had prompted a question. I clicked the answer, it went away, and suddenly all EuCon devices popped right up. Strange.

That's why you don't have Eucon (it's working fine here)
I swapped that out right away -- it was (or appears to have been) that orphaned app scanning for plugins which was holding it back.

Direct download Sonoma 14.3.1 from Apple via Terminal command:
softwareupdate --fetch-full-installer --full-installer-version 14.3.1

then Use Terminal to create the bootable installer (obviously replace the word Ventura with Sonoma):

Great! I'm fetching the 14.3.1 Sonoma installer right now via terminal via Tweakhead's info.

Where will I find it when it finishes?

Currently at 4% "installed" (terminal's syntax there)
