Default Buffer settings

All the processing and buffer settings confuse me and I usually end up just waiting for an error message to pop up before I change anything. Can someone post the recomended buffer size (0,1,2,3,4) and processing settings (mini, small, medium, large, jumbo) and other variables recomended for the following actions:

1. Recording multiple tracks at once.
2. Overdubing. (while avoiding latency)
3. Mixing with multiple plugins
