Looks like the FS-5UL would be my quick punch pedal preference as it latches on/off instead of the FS-5U - which would require that I keep my foot holding it down to maintain it's switched position. Sounds like the FS-5UL would allow me to punch in, take my foot off and engage effects pedals while playing, then punch out. Does that sound right?

Actually...no. I bought the Brownish/Copper colored FS-5UL (latching) before the FS-5U and I had to doubletap the switch every time...lame.

No switch should require you to hold it down while you record. A latching switch would not be a good choice. Whatever switch you use, the jack senses the change(from the pedal) and changes the state of record or non-record. A momentary/N.O. (normally open is the best choice and will work exactly as intended by DIGI. Go into play while in Quick-Punch mode with a track in record-enable and tap the switch to go into record-tap again to go out of record(on the fly) or just stop.

AFAIK a non-latching switch should not need you to keep it held down. I don't have to with mine anyway.
If you have a latched switch, just open it up & remove the spring latch to make it latchless... that's all I did with mine. It's easy enough to convert back if you need to make it latched again too. Of course that could all depend on how your exact footswitch is made but on mine it was very straight forward. HTH.
