Default 2 Dither ??

I wonder which one I have to use .I want to mix down to 16 bits Dat machine.There are two places to set Dither in Pro Tools ,one is in the Preferece/Processing and another one in plug in at my master fader .What difference between these 2 places ?

I believe prefs processing is for when you bounce files out of a session. As a plug in this would be of use on any outputs to external equip (DAT etc). Tech support - Is this correct?
