Default Network setup - multiple Ethernet ports

I’m thinking about adding a third Ethernet port to my MacPro7,1 (2019) via an Apple Thunderbolt to Gigabit Ethernet Adapter.

Current setup:
Since Eucon defaults to Ethernet port 1 on Mac I use that at the moment.
I have a switch on port 2 dedicated to VEPro servers. (I don’t want to mix internet and VEPro servers on the same switch)

Will it work with a third Ethernet port connected via TB for internet access with this setup?

And in that case - is it possible to use a second, dedicated, switch to connect multiple computers to the internet, or do I have to use a router for that?

As for now I use Wi-Fi as my third interface in Network Setup (macOS) to go on-line.
I’d like to turn that off if I can use ethernet cables for the web, but I guess I’ll have to keep using Wi-Fi to connect my iPad (Avid Control) to EuControl, if it’s not possible to use Bluetooth for that.

Appreciate any thoughts!

Lots to unpack....Yes you can add a third adapter. You can use a camera adapter to connect the iPad directly if you want to remove wifi completely.

The internet depends on what you already have. If you have an internet router (which it sounds like you do from the fact you connect to it via wifi) then just run a cable from that to a switch and from there to any computers that need internet. No second router needed.

I bought a cheap USB-C to Ethernet adapter from Belkin and using one of the TB ports on the top of my MacPro7,1 (2019) it was plug-and-play.
So, no problem running three Ethernet Ports here.
