Balanced stereo potentiometer between 888|24 and power amp
Since I'm sure that the 888|24 at +4 operating level puts out plenty of signal level to go straight to a power amp (like a Hafler P3000), I could probably just take outputs 1 and 2 and run them to a stereo balanced potentiometer of some sort and then to my amp. Do any of you know where I can get a good pot for this purpose? Perhaps one with 2 XLR ins and outs?

Make one yourself. You have to make it unbalanced though, unless you'll find a quad pot.

you can modify a console's fader, done it succesfully myself.
