One wire is signal ground, one is left channel, one right. Ground should be clear by following the circuit. Left and Right clear by testing with a headphone and the balance cranked hard left/right.
Right is commonly red, green left. But check, don't rely on that. A stereo phono jack information is all over the Web, ground is sleeve, right ring, tip left. If you remember R=ring=right, all the rest is obvious. --- Wear surgical gloves, there appears to be stuff growing on that gear. |

You could just scrap the jack and feed the monitor outputs on the back to a decent headphone amp.
