Well, thanks for your help. (A little disappointed by the lack of response.) I decided to exchange the NVMe drives for AHCI drives (Kingston Predator 960GBs) for the Mac Pro. They're not as fast as the NVMes . . . or even the Samsung AHCIs . . . but I'm getting some whopping speeds. I'm maxing out Blackmagic's Speed Test at over 2,000MB/s. RAID 0.

Blackmagic speed tests measure cached read performance, so be careful with what exactly is being measured.

OP here, one year later!
I’ve now made a firmware upgrade from 4,1 to 5,1.
Am about to order a pair of X5680 processors and upgrade to a 12-core 3,33 GHz, and 64 or 128 GB of RAM.
Price aside, are there any disadvantages with 128 GB RAM vs 64 GB?
Heat? Speed?

More is better. I wouldn't worry about heat or speed.

Just remember unless you ordered delided CPUs, which I doubt, as they're not very common for that CPU, you will need to dellid those CPUs. If you're not sure how to do that, send me a PM, and I'll help you out.

I had someone do the same upgrade for me to dual 6 core 3.33. He used spacers in the heatsink he told me instead of removing the lids.

Have you watch the video using the vice method?

That's the way I did it, and I really was quite easy.
