As another test, I opened Garage Band on my Mac Studio and no issues - I can record my classical guitar. This throws a curve ball into my initial premise about the problem being with my interface.

ok, I turned off vintage for input 1 - that is what I am plugged into. Are you saying the both need to be off? I will try the other things you suggested - I have more to say but can't type any more:-)
