Use Utilities|Activity Monitor to watch how RAM is really being used. Most important thing to watch is 'page outs'; if you're not getting any/many of these, you have enough RAM, and adding more won't improve performance. If you multitasking with other programs with large memory requirements, you'll start getting page outs, which slow things down. More memory will help in that case.
