Default Fully color coded tracks?

Hi all.

In this photo...

..you can see that every track is fully color coded. But I've not been able to find out how to do this. I'm running 7.3.1. I've looked in the preferences, in the manual, on this forum and googled it.

Does anyone know how to do this?
