As of right now, a Rode K2, and a couple SM57's. We're gonna keep expanding as time goes on.

Well, in regards to "amazing" quality. I love the quality of the Apogee Duet from what i've heard. I would really like to know if there was an interface in my price range that delivered the colour of an Apogee, and more. Just a good transparency.

In a word, no. There will be interfaces in your price range that sound good but not like an apogee.
Another thing you need to consider is your room. There is not much point spending all this money on gear if you are just going to set it all up in an untreated room and then have your mic in the same space as your workstation.

Well the Mic and Instruments will be in a different room, adjacent to the workstation.

The room will definitely be treated properly. I'm gonna keep researching the Ensemble.
