Yes, exactly. You can always split a stereo audio track to 2 mono tracks later if you just want it mono (for a bass, say).

This is kind of a way of asking "How do I mix?"

No offense intended, it's just a very broad topic. Not every source needs to be stereo.

The best thing you could do IMO - once you arrive at a sound you like in your VI, create a mono duplicate. Compare the two and see if there is anything that makes you like the stereo version more. If so, follow above advice about not always panning full left and right. Play with it.

Some synth sounds have stereo modulation that really compliments. Others just have some sort of chorus or reverb creating a stereo image that may or may not be necessary or that you can do outside the VI.

Orchestral VI's are a whole different beast but it again depends if we're talking a section or a solo instrument.

Experiment! No absolutes in mixing.
