It’s however you want it. If you want the Dock knobs to control the parameters in AC and have a close physical representation of those adjustments then place whichever tablet you want for that amount of control in the Dock. If you choose the 12.9” iPad for that function then it will sit in portrait mode in the Dock.

I've attached a more recent screen shot of EuControl.
I'm. not sure why I'm struggling with the concept of what Control app on what Surface on the S1 or the Dock is throwing me and I apologize.

What determines if the S1 encoders or the Dock encoders adjusts the plugin parameters versus acting as a meter bridge?

Left to right on my desk are S1 (Left) - S1 (Right) - Dock

In my latest attachment I have S1 (Left) linked to an iPad mini, S1 (Right) has an iPad Pro 12.9" linked to it yet in EuControl the Dock and Avid Control running on the iPad Pro sit with nothing linked to them. Having said that the iPad Pro is working as the edit tablet and the other two as meters.

It's preferred to have the larger iPad Pro used to see my plugin edits. My eyes are bad which is why I rely on it. If it matters at all, the older iPad mini is about to be replaced. Knowing how this works will help me determine if I need to buy another iPad Air or another 12.9" Pro.

With your current EuControl configuration do the layout shown in this photo.

It’s not clear however that this is how you want it.

Alright so I'm trying that and other than the added meter bridge am I gaining anything else? I launched a couple of plugins from the Dock and the parameters don't line up with the encoders and there are fewer parameters available. My UAD API2500 Compressor as an example: With the iPad Pro on the S1 in Landscape mode I had 16 combined encoders from my two S1's spilled out with two pages of options. When I tried to access the 2500's parameters from the Dock I had a total of 6 parameters available even if I tried to do a custom map.

I appreciate all you've done and I'll try this for a day or so to get a better feel for what it offers.
