Default Wav to Aiff

I've been told to go into iTunes Preferences > Advanced > Importing but there isn't an Importing tab in iTunes 8.1. Is there another way to convert Wavs to Aiffs?

That setting has moved. It's now under the General Tab > Import Settings.
