How to set up a fold down from a 5.1 setup to an alternate stereo speaker?

I just purchased a used Pro Tools Carbon (my HD Omni system was dying), and I'm having trouble setting up my old monitoring system. I'm set up for 5.1, but with the Omni, I would hit the "alt" button and my 5.1 mix would be folded down to a stereo output which would get sent to some Avantones. I cannot figure out how to make this work in Carbon. I've heard of a software called Dadman, which I installed, but it doesn't seem to work with Carbon, only MTRX.

You need to setup your monitoring paths in Pro Tools.

I did see that video, thank you. What I don't get is that he's moving around the L, R and C squares, but when I hover my mouse over them, a Lock symbol appears, and I can't touch them. EDIT: I just figured out I can change the order of the 5.1 speakers, but I still can't set up a fold down. Even if I could just get at least the L and R to go to the avantones, that'd be something for now.
