Default Changing midi Controllers in Protools

I am opening an intrument inside of protools, and am trying to use my m-audio controller to assign the knobs to certain parameters inside of the Instrument EX: Cutoff or Envelopes controlls. How do I go about doing this as for some I can right click and midi learn but other I cannot. Is there any preference in 7.0? Thanks for your help as I am new to the features since 6.4.
