Well few months ago we couldn't have imagined that one day we'll see TB working in a cMP, so it's freaking amazing to see it up and running, and better yet, working fine with a TB audio interface!

I wouldn't be surprised if soon enough someone will figure out a way to bypass the windows cold-boot hack...

High Sierra
For Mojave as you know you need to change out the video card and that's easy.

I was just thinking of options if you really wanted to stick with the Apollo.
According to everymac the Mac mini I7 kills the old trash can and just about holds its own with the 2013 2.7 12 core but those minis are about $2500.
and are there still some issues with the minis and Usb making them unsuitable for music?

I thought the usb bug (audio clicks and pops with USB Interfaces) was fixed in Mojave 10.14.4

Can find a refurb i7 Mac Mini direct from Apple for under $1100. Less than $1300 if you add 32GB of third party RAM. I grabbed a i7/8/256Gb for $1049. External SSD’s are great for fast storage. I’ve read many reports that the USB audio issues have been resolved.

Also don`t forget that the SATA port are SATA II and not SATA III so to get the 500 mb/s you will need a card like the apricorn but you will loose a PCIe slot

Other than not having a Thunderbolt port there's not a thing wrong with a cheesegrater Mac. Plenty of life and power in those old machines and with a video card upgrade they're more than capable on running Mojave. Put the system drive on an ssd on a pcie card to help things along. And you still have a slot for an ssd for samples and/or PT to record to.
