Default playback engine settings

Mac Pro 2.8 ghz quad core intel xeon 3gb RAM, 1TB internal drive, 3 500gb internal drives to record to-- audio allocated to all three equally
running osx 10.6.6
Pro Tools HD 9.0.2
2 AD16x
1 DA16x
3 192
Apogee Big Ben

Probably more info than necessary... how many processors should we set in the playback engine?

Try one less processor than it has available... that's working great for me on what appears to be the same machine.
