Conversion Primer Anyone??

Alright... I'm looking to get a better understanding of what converters do to the signal chain and why it would be useful to upgrade them. I am aware that if you record all of your tracks through nice converters, the end result will be cleaner, but I don't understand why and I have the slightest idea what they do or how they work. Are there any tutorials out there with a good explanation?
