Yes, most good docks take TB in and relay TB out. But if the point is using the mini, dock is kind of counterproductive (IMO). Thus the real benefit of studio hardware lies in connectivity (and large insanely fast internal storage if you want to sell your kidney for it).

OK.

I have:
On the two USB3 ports:
Topping DAC
Apple extended keyboard w/ilok

TB1:
The fastest 2 TB NVME SSD in enclosure

TB2:
OWC TB dock:
2 TB SSD
2nd HDMI display
Artist Mix on ethernet
USB 'Snowball mic'
Midi keyboard
USB camera

Second usb dock (connected to 1st dock) with:
2nd midi keyboard
SSL UC1

…and a second Artist Mix coming, so that will be connected to a ethernet switcher.

I also have 3 magic mice and two keyboards on bluetooth.

My point is; much is possible, even with the M1 mini's supposed limited connectivity.

Depends on your work and projects but I'd say yes.
RAM is always a good investment. With audio I'd rather spend the money on RAM then on GPU cores. Although you should keep in mind to have enough GPU power to drive the amount of displays you need.
I bought the M1 Mini when it came out and opted for 16GB and 10GbE and it's pretty a impressive machine. Since the new Studio is way more capable, I'd take at least 64GB of RAM.
