The most common cause of this is not having microphone or any other audio input is not having macOS "Microphone" privileges granted to Pro Tools. Check this is enabled in

System Settings > Privacy & Security > Microphone

Pro Tools will seem to work fine but you just won't every get any audio input to the app, it has nothing to do with actual microphones, Apple means any audio input.

The other thing to check is that Pro Tools is starting up as whatever version you think it should, for example if it is only starting up as Pro Tools Intro you only have the first four audio inputs that will work, and Pro Tools frustratingly offers no clue or warning about that. (Lack of any warning like that when you exceed I/O limits in any versions of Pro Tools bugs the heck out of me... very user unfriendly behavior).

(Edit: You should also confirm in the Apollo Console that you have that input signal routed to the DAW input, it's not muted etc.).

MIDI keyboards don't produce any sound, you need to feed them through a virtual instrument plugin for that to happen, and I have no clue exactly what you are doing there. Focus on getting audio input working first.
