You better grab the Get Current deal that is going until years end, then try latest PT version instead of 12.5 (otherwise you need to find original W10 installer to install a very old version).

That is the official AVID tested & approved statement.

That said ... have any Windows Pro Toolers here encountered any issue with 21H2? Or any build version for that matter? On any Win10 approved Pro Tools version?

I have never seen any compatibility issues with any build version. My 2 cents.

New PT versions may work, but they are not supported. However we are talking about 12.5 here, which was the first to get W10 support so likelyhood that OP needs older W10 version is a big red flag to me. But I am not a Windows guy, what do I know...

I just bought the upgrade using the sale that Avid has going on. I'm sure that the upgrade won't hurt me, regardless. I'll let you know if my issue is resolved once I get it installed.

Pro Tools 12.x on Windows... mmmm you might have been seeing the Pro Tools Windows Floppy drive bug. Not sure when that was fixed. But maybe just worth making sure there is no floppy drive configured in device manager and/or enabled in the bios... yes even if you don't have a floppy drive. That stops Pro Tools periodically trying to read the drive and hanging. The floppy device (without an actual drive) might have been added while messing about with updates or other changes.

I upgraded to 2021.10 and I'm still experiencing the same problem.
It's a little bit better in that I tend to get about 30 seconds instead of 20 before it hangs for 10-or-so seconds.

I guess the next step is to go through the plug-ins... (could take some time)

First thing to do is throw all plugins to unused folder and see if it freezes on normal operation. If not, you know some of the plugins is your root cause.

But it is still unsupported, so this thing may fix itself once Avid comes up with another release that actually supports your OS

Yep move all .aaxplugin files out of the plugin folder. Leave them out until the problem is found/solved. Pauses/hangs while saving a project can especially be plugins.

Trash prefs (should have already done that). Use the Trasher app if not perfectly sure what to do.

Try with a new empty session, not a copy of an existing session, not from a template.

Make sure no other apps are running.

Is the Windows system fully optimized? Every last thing? Yes even if it worked fine before. Make sure crapware including antivirus software is fully disabled or better uninstalled.

Windows event log may give clues.
Pro Tools log may give clues.

You can google for info on both.

Post a SiSoft Sandra report, which you should already have done... see "Help Us help You" up the top of each DUC web page.
