Thank you all!
Now I’ve got some pros and cons to consider.

I will end up on Big Sur sooner or later, so if there’s no other major issues/changes besides the bootable clone-problem/work-around, I think I’ll go for that right away.
Are there any third party developers, hardware drivers etc, that you know of, that hasn’t catched up to macOS 11 yet?

Regarding raid: Darryl mentioned ”lower reliability (due in part to folks making mistakes in RAID setup)”.
I’ve never used any kind of raid before, so what are those reliability problems and mistakes, if I decide to try that?
(I think I’d prefer a raid-0 setup due to simpler organizational structure more than speed.)

RAID0 means a fault on single drive means fault on entire system. And the more disks you add to the configuration, the more single points of failure you introduce.

In other words you need external backup of it all to be sure you have it. There is no parity, no redundancy, no way of simply replacing faulty disk.

Bottom line: As long as I have a reliable backup strategy, it’s worth trying.
I might do two raid-0 with 2x2TB in each on that Sonnet card to make the libraries a bit less fragmented and still less vulnerable than a x4 disk raid.

Was hoping you could give some advice. I have searched far a wide and can't find a concrete answer. I am about to upgrade to the 2019 7,1 16core and was set on the basic Radeon Pro W5500X with 8GB, but wanted to know if upgrading to the Radeon Pro W5700X with 16GB would in any shape or for help on faster offline Quicktime bounces in Protools?
Of course I always freeze (or commit) the haves Plug in tracks to take the load off in rendering/bouncing to a QT same as source in PT. But wanted to know if getting the Radeon Pro W5700X with 16GB would help? And if so how much (well an approximate) %'wise could I expect in bouncing to QT vs. he basic Radeon Pro W5500X with 8GB?

Watch out for the minimum system requirements of the newest Apple MPX cards - the 5700 will run on Catalina whereas the 6800 needs Monterey.
I’ve no idea about the QT question I’m afraid.

Because of a lot of evaluation and research there is no certainty on how long that little bit wait will be. Especially till it becomes rocksolid with ProTools, video and everything all the third-party plug-ins on the market today. Could be eight months or could be almost 2 1/2 to 3 years from now audio postproduction mixing 5.1 features.
Second it has become extremely tiresome and time-consuming working 12 hour shifts but only getting roughly 8 hours of work done because of constantly waiting on freezing (And then unfreezing for a quick fix just to wait to freeze again) tracks and rendering and waiting some more to make quick times for clients same as source and then converting that into a smaller file from 20 GB to 50 GB something smaller using QuickTime Pro that’s manageable for emailing clients.
For the smaller shows that have extremely quick turnaround times and networks waiting on the final product they after day week after week. It’s not worth it to jump on something much more powerful that I can get increased to productivity.

Others might have different situation but this is mine.

I figured if I’m spending this kind of money mine as well go all out if it would behoove me timewise.

Not worried about that at all since anyone who buys a brand new 2019 Mac Pro Desktop cheese grater today will take about two weeks till they ship it out/receive it and it’s gonna come with Monterey anyway.

Well, clearly it's up to you, but no need to buy a 7.1 new - loads are being sold for knock-down prices at the moment.
Also, even if it ships with Monterey, you can downgrade to Catalina on a 7.1, which has the advantage of allowing you to boot from an external disk easily.

I have thought about used, but on the fence. Since I'd be keeping it for at least 7-10 years. Just like my current mac I bought in 2013 (specs in my sig) know that in 5 years or so I can upgrade the internals like I did mine drastically. I NEVER knew or thought I could upgrade the Ghz when I bought mine at 2.4G to a 3.46 and then use 16b sticks and SSD via Pcie years later. So thus the 7,1 being modular (probably the last ever to) makes it a long-term investment. Plus for the first time they have a yearly warranty plan. Was also on the fence about that, but $110 a year till at least the end of this decade for peace of mind goes a long way.
