Does anybody know how to record a dry signal, but monitor it through headphones with reverb fx?

A dry signal of what? Guitar, vocals, drums? What interface are we talking about?

I'll just assume you are talking about using the MIC input on the Eleven Rack.

So first you would plug your mic into the INPUT on the front of the 11R. Flip ON the 48v phantom if you are using a condenser or mic that requires phantom power. If you don't need it, leave it OFF.

In Pro Tools create a MONO Audio track, Choose MIC for the input.

If you arm that track, you should hear the dry mic signal. Adjust the input gain.

Now to hear reverb or any other effect. Switch the input of the Eleven Rig to MIC, you can do this from the 11R or the on-screen editor.

Now create a Mono or Stereo Audio or Aux track. Set the input to Eleven Rig L/R

When you arm the track you will hear the mic signal being processed through the rig, adjust the rig to fit your taste. If you just want reverb, then bypass the amp, cab, and all other effects.

Now if you chose an Audio track, you can record the effected sound with the dry sound, if you chose an Aux track you can monitor the effected sound, but it won't be recorded.

So arm the dry track and then mute it (if you want), then you will only hear the effect track while recording, but you will be recording the dry sound.
