Like automating the pitch on a midi track, can you automate the pitch on an audio track using Elastic pitch from the EA Properties window? Or is it limited to sudden pitch changes?

Limited to non-automated pitch changes.
Elastic pitch stretching vertical-warp markers could be useful.

So is there anyway to automate pitch on an audio track?
Maybe drag the sample into Structure then automate the pitch shift knob? Ill give that a shot. |

If you turn on EA and use the Vari-Speed algo you can do this in a limited way. Not as easy as it is on a midi track, but still possible.
