This may be a stupid question but is there a version of XP that supports more than two processors?

Yes, XP Pro. Microsoft will liscense up to two physical CPUs on XP Pro, no matter (yet!) how many cores are on the physical CPU.

Of course Linux will scale up to as many processors as you want, without charging you a dime more per CPU that it runs on.
