Slate Trigger and Drumagog work quite well and will follow/track dynamics pretty well. You might try running drum tracks thru Melodyne to create a midi file as that SHOULD also follow dynamics. I use Drumagog to augment or replace acoustic sounds, or I paste in samples I create from the kit on the tracks(created by advancing paste the end of the song, and having the drummer record single hits on each drum). I have also used those "homemade" samples in Drumagog, but it sounds better if I paste them in(takes longer, but sometimes its worth it
). Pretty sure that Massey's DRT plugin also creates a midi track and that would probably be my first stop to check out for your purpose.
