Actually, all you need are Aux Input tracks as a place to insert your VI's.

All an Instrument track is, is a combination of a MIDI track and an Aux input.

As has been said is previous posts, you then can just route any MIDI track to whichever plugins you require, using multi-timbral VI's more effeciently by having them playback multiple MIDI streams.

This can be a bit more clear depending on how you like to label your tracks:



Drums-groove
Drums-fill
Piano-part A, etc

might be names of the MIDI tracks ie named for the parts



Structure
Strike
Velvet, etc

Might be names of the Auxes ie named for the VI
