The simple way is to take the last song, add about 30 seconds of silence (or whatever) to it and then add the hidden track you want to use and combine them into one file that becomes the last track. Then only the last song will have a track number and the "hidden" track will start to play after your 30 seconds of silence. Of course, on the CD label, you only list the runtime of the last song, not the addtional hidden track. You don't need any special software to do it this way.
