Default Re-Amping (What to use?)

This is not a question of how to do re-amping but what to use.

The guitar input, for most of us, is through the front guitar input and is mono
and this is where the dry signal is taken from.
The wet signal further along the chain can be mono or stereo.

I was wondering how people record and re-amp these signals and why.
For instance, my method and reason (as the how-to has been explained in print and video).

I use the SPDIF into 003 to record mono DRY and mono WET. Works ok but I thought what if I want stereo effects (like panning ) so I then connected the Main-outs (XLR) this gives me the stereo. This input also gives me a very good guide on the record meters in PT of signal strength. I set the WET output of the rigs to show the top third of the yellow area in the meters when hit the hardest.
So I now use the XLR to record WET and mono SPDIF to record DRY. This raises the question should I record SPDIF in Stereo for ease of use, but then ask myself why because the input was mono anyway.
