The Xeon Gold 5122 should work fine since it is in the same Skylake family of processors. The big difference is that the 5122 only has 4 cores. So, it would really come down to how big your sessions are and how much processing power you need.
The Xeon Silver 4108 is a pretty slow processor by today's standards, so again, it comes down to how taxing your sessions are.
You could also look at something like the
Sweetwater Creation Station which uses more modern processors and which they offer support for if you run into issues.
