One legit method is using SplashTop. While it's just a remote access app, the response is fast (muuuuuuuch quicker than something like iTeleport), at least on a local network, and it can stream audio from your Mac/PC to your iDevice. I've only used it streaming Pro Tools on my local network, but it will also work via internet. Not sure how sluggish it would be via internet, though.
Granted, it's probably not a great solution for serious work, and you cant record from the iPad, but for transport and doing minor work, it's great.
