Once you have Strike enabled on an instrument track (not a midi or audio audio track) you can open the midi editor on that track and use the pencil tool to draw in midi notes. I do this all the time...

I too was on a budget and already had a working monitor and firewire drive. I got an Intel Mini 2.66GHz with 8GB ram for far cheaper than any other mac option and it's working out great.

Also, I don't have a lot of experience with changing the buffer/dialog engine to only 1 processor, I've never felt the need to! Mine has always been at 2 (out of 2) and my system runs very well.
