Apparently the Optical Out supports surround sound formats, but then of course Dolby Digital and DTS are simply matrixed stereo tracks, not 6 discrete channels. I don't suppose Apple will be realtime...

Actually, you can. There's an app called Audio Hijack Pro. Its main claim to fame is that it can "hijack" internal audio routings from applications and save the stream as an MP3 or even a 24bit AIFF...

Dither from 24bit to 16bit on bounce to disk? If you want your music on CD, yes. It's probably always a good idea to keep a 24 bit backup, and of course keep the mixdown 24 bit so whoever's mastering...
