Option and choose a bus routing to initiate all.

Now,how can I set the volume on all those buses at the same time. Instead of one at a time bringing up the bus volumes.

If you want them all at 0dB, then Option+Shift and click on one send fader will send all send faders in selected tracks to 0dB.. otherwise in your prefs, in the Automation tab, check the option for "send levels follow groups".. then either create a group for all the tracks that you want to adjust or use the "All" group.
