This is the learning curve I anticipated, but it's still loads easier than Sonar was on the PC. Loving the PT experience so far!

What do you mean by 'next track'? And what sort of tracks are you using? The simplest is to use Instrument tracks which are a combination of MIDI and aux tracks. This way you have a track that has the MIDI and to which the audio from the vi gets returned to.
When you go to render the audio you have two options. If you have PT11 you can route the output of the instrument to an unused buss then you can use that to offline bounce to audio (consult the user's guide (aka The Manual) for how to do this. The other method is if you do it in real time; you'd route the output of the Instrument track to an audio track, make a timeline section for how long you want to render the audio (length of the MIDI plus a couple of extra measures to account for reverb tails), record arm the audio track and press f12 on your computer keyboard. PT will render the audio in real time to the audio track.
