Here's a couple of good books to read:

5.1 Surround Sound: Up and Running
by Tomlinson Holman
Paperback: 280 pages;
Publisher: Focal Press; (December 1999)
ISBN: 0240803833

Sound for Film and Television, Second Edition
by Tomlinson Holman
Paperback: 368 pages;
Publisher: Focal Press; 2nd edition (December 2001)
ISBN: 0240804538

Both are a little dated and need some updating, but they're still very useful. Even if you don't necessarily agree with all of Holman's ideas, I think the books will help you get a grasp of the basics.
