I can confirm that garageband does in fact work with third party Audio Units. It has two slots for two instances of Audio Units other than the very rudimentary compressor, gate, eq, reverb, etc. that comes bundled with the application. It is a pretty interesting application. You got to give it to Apple for Ease of Use...

Have you tried an audio units virtual instrument like the Spectrasonics stuff?
