Allenstein for Video/Graphics Work?
I'm thinking about getting into more video editing and graphics work. How does the current Allenstein perform when it comes to running Avid Xpress, After Effects, Photoshop, etc.? Will it work well with the Mojo? Should I consider a different video display card? What is the minimal storage configuration I should consider for 1:1 SD?

I'd look into a Matrox G550 or better video card for video work. I'd also look into the dual core processors since you will be getting better performance outside PTLE. The modified Allenstein A8V Deluxe would be a good one to start with and the fastest dual core processor you could afford. If you were just doing PTLE work I'd still recommend the current Allenstein Machine.
