Default 7.3 to 11.3 learning curve

Going upgrade from 7.3 002R to 11.3 and Scarlett and changing from old dual core PC to new MBP quad w/goodies. Hopefully there isn't too steep of a learning curve here for me to get up and running. Tomorrow.

Can anyone point me to something that tells some of the new, cool things I can expect and how to do them? Are there any tutorials? Will I be lost for a few days?

You won't have a very steep learning curve. Protools 11 works just the way previous versions have for many years now. All the inputs and outputs route the same way and the plugins and busses are in the same location.

The faders are longer. There's a couple of metering options. You no longer have access to the CPU allocation, the Avid Audio Engine does that for you. There's also a new pitch shift plugin.

Offline bounce is the balls

Check out the What's New in Protools 11 Guide

Also, don't forget to download and install the Air Creative Collection. And go make sure you have AAX installers for all of your third party plugins as RTAS does not work at all in Protools 11.

Which Scarlett interface did you get?

The bounce dialog is a bit different because of offline bounce and multiple stem bounce but aside from that the experience should be fairly seamless.

Since PT7.3 there have been plenty of new additions, as already mentioned.
- PT7.4 gave us Elastic Audio
- PT8 gave us track comping, midi and score editors, and new VI's
- PT9 gave us delay compensation and the possibility to use 3rd party interfaces
- PT10 gave us realtime fades, clip gain, and 32bit float sessions
- PT11 gave us 64bit app and plugs, better metering, better performance

...just to name a few :) the old stuff works pretty much just the same, only with more options like multiple automation lanes and such.
