Personally, I hope we see the end of Fusion Drives in the not too distant future and with the release of High Sierra heralding a new file system on Mac OS that doesn't support FD's... well, fingers crossed

Any reason you can't keep your Snow Leopard/PT 8 rig running and get a 2nd modern Mac just for email and surfing the web?

Back in the olden days we used these things called "reel to reel tape recorders", they were machines that did two things only: record and playback audio. Names like "Ampex", "MCI" and "Studer" that could run for decades.

I've always viewed PT the same way: primarily it records and plays back, with the added ability to mix everything together.

I just got PT 12 running from 10 and 11, both are really good, but I'm still running PT 10 most hours of the day - not because of ProTools but because of Sierra, which has thrown a host of monkey wrenches into my workflow. (Specifically system audio and navigation issues). When I boot back into Mountain Lion those OS problems disappear. I get my work done on PT10 just as quickly as on PT12.8 (admittedly 12.8 is prettier) but outside of PT all my other tasks get done much faster in Mountain Lion than Sierra.

Upgrade to PT12 if you can, the biggest PIA will be upgrading every single plug in from RTAS to AAX, but if your Snow Leopard Mac and PT8 are getting the job done... maybe you should keep it. (FWIW i still have PT8 on a G5 that still runs fine, it's a backup.. but haven't booted it up in months. Actually still have PT5 on an OS9 Mac that I haven't tried booting up in years.. I've tried donating it to our local Mac museum )

Personally I wouldn't go back to the "pre-commit"/"pre-offline-bounce" days for all the tea in China. YMMV.

Still have our two 3M 24ch 2" machines here with JL Cooper Sync and they ALWAYS work ... in stark contrast to our Mac Rigs Love those 2" beasts. Service for both every two years ~ €300 which is very reasonable for what we get. They are always hooked up to our SSL4000G+ 48 ch desk and whne we feel fancy we just turn that setup ON and start recording, never fails,

There are some sound bleed on the track beside the sync track but WTH .. thats OK as we have them slaved so we still have 46 super fine channels with those 3M.

New tape or old? Got to be difficult to find new/unused recording tape of any size these days.

Speaking of tape watch some of the later Sweetwater YouTube videos; when they pull back a bit there's a reel-to-reel deck in the background just sitting on a shelf. I'll bet there's plenty of these new kids on the block that don't know what that is

Both. We have quite a few "new old stock" and a whole community who still use tape so there have never been any issues getting tape and doing true analog recordings The new tapes are a bit costly but it gets paid by the record companies we work for which saves us quite a bit each year.
