Default DSP mixers

HI!

I am an amateur recording/mixing (and mastering....lol) 'engineer'. I do the best I can. I know Pro Tools audio pretty much inside out. I don't use video.
Here are my questions and they may be vague and may need a long response so I appreciate anything you can give me.
Why would you ever turn a knob or move a fader on a DSP mixer?
Now I understand that you may want to route AUX's for different headphone mixes, but I just use sends in Pro Tools for that.
Also, if there are say 16 faders on your DSP mixer and 30 tracks in your session what good does it do you anyway?
Obviously, I understand very little about DSP mixers.
