I tried Pro Tools 2020.5 on MacOS 11 Big Sur

Should be rock solid with all the bugs sorta addressed in late 2022

Just upgraded to Mojave on my main machine. I have a work machine that came with Catalina and I was pleasantly surprised when video actually worked... I generally stay about an OS or two behind because stability is worth more than having the latest greatest OS. Been working this way for a long while now,
