These projects already existed... so I didn't have a drive to format from scratch. Also this only happens once in a while so not a good choice for me, but thanks anyways.

For me I found it much easier to just use MacDrive Standard. Trying the trial version now and it works effortless! The Macintosh drive with my projects comes up automatically on my desktop as soon as the drive loads. I'm buying MacDrive standard. Highly recommend it! $50 well worth it.

I keep an old Kingston 120 Gb SSD in a USB 3.0 case formatted exFat for moving between my rMBP and my i9 Win 10 machine. Best repurpose I’ve found for an older, smaller SSD.

Why are people trying to make this hard?

You don't need any third party software.

If both computers are on the same network with file sharing, just drag and drop the session folders between systems.

If that is not possible then the simplest thing is a USB flash stick/thumb drive used to transfer the sessions between machines. Format it exFAT as JCBigler already said... you are not running sessions there, just using it to transfer between machines. Put that USB drive in your tool kit for future use. Everybody should have one or more of these USB sticks available.

As per others: Paragon HFS+ works fine on MacOS to read & write files; MacDrive works fine on Windows to read and write files. My fave for when I (permanently) migrated a half doz drives from Mac to PC is Paragon's free HFS-NTFS converter, works perfectly in either direction. https://www.paragon-software.com/hom.../download.html
